I was favorably impressed by the Chinese waitress who greeted me with a smile as soon as I entered the restaurant. I ordered the hot and spicy hot and spicy noodles (ma-la-tou-shao-men). As soon as I placed my order, the waitress said in a loud voice, “Thank you!”
